FWIW I never had a Protector, but I can vouch for Immunize (currently exploring B24F).
The sidekicks vanish from the map when you kill Fenrir, you just need to be faster. :) I have always used 3 frontline fighters (L, S, D), an Alchemist (specialised on fire) and a Medic in the back.
There are monsters with exceptionally high resistance to physical attack, though. They most often have high attack power, too, and it is handy to have everyone use defend and the Alchemist kill all of them with a single spell.
But in general I'd agree with Genji. If you have to choose between a good skill in the second tier single damage spell and the group damage spell, go for the former..
